Another trick I use to get dinner on the table is batch cooking. If I am cooking something that freezes well, I’ll make twice as much as it takes to feed us, and put half in the freezer. Along the same lines, when hamburger is on sale, I stock up, and put it in the freezer pre-cooked. this makes it quick and easy to have tacos or to start a pot of chili or soup.

Every now and again, I actually get organized and put several meals in the freezer. This is not as hard as it sounds if you just concentrate on one type of meat.

    I got some cool menu plan and shopping lists for doing this, but I have this teeny tiny apartment fridge that barely holds waffles and popsicles! I can’t wait to move and buy a great big deep freezer so I can do this more often.

    Yes freezing food is a god-send. I don’t know what people did before fridges and freezers came along. It is really helpful when you are making sauces.
